Walnuts have been promoted as a great brain food, because they look like the brain and are high in Omega 3.  All ingredients should be organic, including the eggs.  Great way to start the kids off to school, contains enough protein to hold them till recess and kick starts the brain.  They are really good!

This recipe makes 1 loaf or 12 muffins.

  • 1 cup walnuts, chopped
  • 1 ½ cups freshly shredded zucchini
  • ½ cup coconut oil
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp. of vanilla
  • ½ tsp. of aluminum free baking soda
  • ½ tsp. cinnamon
  • ½ tsp. salt
  • ¼ tsp. baking powder
  • 1 ½ cups of BOB’S RED MILL Gluten Free flour
  • 1 tsp. xanthan gum

Shred Zucchini and chop the walnuts in a food processor and set aside.

Use a mixer to beat the eggs and add the sugar, oil, vanilla.  Add the baking soda, cinnamon, salt, and baking powder.  Slowly pour in the flour and xanthan gum until well mixed.  By hand, mix in the zucchini and walnuts.

Pour in greased & floured loaf pan and bake at 350F degrees for 45 min.
Muffins bake for 35-40 minutes.
